Apple Sponge Pudding/Dessert Recipe.

If you and your family like Apple Pie but you feel like you need a change but still want to use up all of your apples, this Apple Sponge Pudding Recipe is a good alternative.


It is very easy to make, economical, healthy and tastes delicious, with a variety of toppings that you can use such as Ice Cream or Cinnamon, or just leave it plain, the choice is yours.

Ingredients for Base of Apple Sponge Pudding/Dessert.


4 x Granny Smith (green) Apples
1 x Teaspoon Grated Lemon Rind
1/2 a cup of sugar ( white or raw)
4 x tablespoons of cold water.
Few Whole Cloves ( 6 to 8).

Organic egg.

Ingredients For Topping of the Apple Sponge Pudding/Dessert.


2 x Eggs
1/2 a Teaspoon of Vanilla Essence
1/2 a cup of Self Raising Flour (sifted)
1/4 of a cup of Castor Sugar.
Pinch of Salt ( I use Sea-salt).
1 Tablespoon of Castor Sugar extra.

Base Mixture of Apple Sponge Pudding ready to cook.

Method For Base.


Peel Apples, core and then slice fairly thin.

Combine the apples in a saucepan with sugar, water, lemon rind and cloves.

Cover the saucepan with lid and cook gently until Apples are tender.
Then place this mixture into a greased pie dish (approximately 6 cup size).

Remove all of the  cloves.

Complete mixture of Apple Sponge Dessert ready to pop in the Oven.

Method for Topping.


Beat the two Eggs and Vanilla with Electric Beater until thick and creamy.

Add the Castor Sugar gradually, beating until dissolved.

Then fold in sifted Self Raising Flour and Salt.


Spoon Topping over hot Apples, sprinkle with extra Sugar.


Bake in a moderate oven 180-185 degrees C (this will depend on each individuals oven) for 30 to 35 minutes.

Note:   Make sure that you add the sugar a little at a time and fold the self raising flour in, otherwise the crust may go a little hard and not rise as it should.

You may also choose to use another type of cooking apple. Granny Smith is my personal choice.

Serving Suggestions for Apple Sponge Pudding/Dessert.

A couple of serving suggestions. We have tried them all and they are all nice.
Hot Vanilla Custard ( home made). Fresh pure cream. Yoghourt plain or flavored. Ice Cream any flavor.

Most of the ingredients I use in my cooking are Australian grown and produced. So maybe some of the names you will not be familiar with, if this is the case let me know, I will endeavor to sort it out. A lot are straight from a Farm, no nasties on or in them.

Oh yes folks I can vouch for this one. That serving you see in the picture was mine and now it's gone. Yummy.

I love my Apple Pie but this Apple sponge pudding has less pastry and helps keep the waist line down. Well that's my story and I'm sticking to it lol

Yum, yum, yum sonds just what I'm looking for. I'm trying your apple sponge pudding this weekend as I'm having some people over for our 'crafting-get-together'. it was the same in our Family, having Apple Trees in our garden, it was a regular pudding on our table.

It is nice, you could also make it with Pears if you prefer, that also tastes good.

hi are your cup measures American ones? I've already cooked the apples so will have to guesstimate the quantity for those.

Quite excited at trying something different to apple crumble (and the crumble bit never quite works). I have a lot of cooked apple in the freezer to use up so nice to have a different receipe.

jacks, Hi . In all of my recipes I use the Metric cup (250ml).

I did not realize that the Cup sizes were different until I did some research.

For your convenience I have put the conversion rates that I found in my research below:

Conversion for 1 Cup in my recipes =

Metric 1 cup = 250ml,

US and British = 1¼ cups,(one and one quarter)

Imperial = 8 fl oz

thank you for your reply. I made it (two nights running!) using your cup quantities but with a USA/UK cup measure it was still tasty and volume difference only really affected the ingredients relationship with the egg. It did end up with a hard top despite adding the sugar and flour a bit at a time and sieving the flour but I still count it as a success - thanks.

RTalloni. Hi. Would goat's milk be a good substitute for cow's milk in any recipe that requires milk.

Goodness with 2 bags of apples,you could make this recipe several times,plus apple crumble,apple upside down cake,they are all nice, and can be frozen so I am told.
