How to make Chocolate Crackles Surprises - Recipe

Chocolate Crackle Surprises
These sweet little treats without the Sultanas can be known as Chocolate Crackles.
There have been different recipes around for many many years on how to make these crackles some are similar to this one, others with an ingredient left out or maybe one added, even a substitute for one of the ingredients, depending on what your child can or cannot eat.
Our personal choice of one of the Ingredients is Kelloggs Rice Bubbles.
You may have your own favorite brand!
The Children will love them. As a special treat for a Birthday Party, when their friends come over to play or for a tea party, anytime really :)
Apart from heating the Copha, it is a great Recipe for the children to be involved in the making of. It might be messy but believe me the kids will have a lot of fun :)
Ingredients
The ingredients needed to make these scrumptious Chocolate Crackles are:
- 250 grams Copha.
- 1 x cup Soft Icing Sugar ( plain).
- 3 x Tablespoons of Cocoa.
- 1 x cup Desiccated coconut.
- 4 x cups Rice Bubbles.
- Small quantity of Sultanas.
Copha is a vegetable shortening.
The ingredients for Copha are hardened coconut oil, soya bean and lecithin.
Method
Combine in a large mixing bowl Icing sugar, coconut, cocoa and rice bubbles.
The order in which you combine the ingredients really doesn't matter.
Mix them all together very well.
Place the Copha in a saucepan on the stove and melt it very slowly.
Once it has all melted take it off the stove and let it cool a little.
When it has cooled slightly pour into dry ingredients and mix all the ingredients thoroughly.
Filling the Patty Pans
Half fill Patty Pans with mixture and the surprise is to add three or four Sultanas but not to every one then fill the Pans until the mixture is sitting above the top of the Pan, add a couple more Sultanas on top.
Place the finished Chocolate Crackle Surprises in an air tight container and Refrigerate until they are set.
I used 5cm (they are called Mini). Patty Pans this mixture made a total of 50 Chocolate Crackles. They are quiet small.
Not so much of a sugar rush for the children, but you could use larger Pans if you want, which would give you less in total, maybe twenty five to thirty.
